I love LOVE love Redneck Caviar.
Okay, maybe it's never been a secret, but I bet YOU didn't know that!
Redneck Caviar, or Elba Bean Dip, is a recipe that my dear dear friend Jessica and her mom passed on to me.
It all started years ago, at a sleepover at Jessica's. It was late at night and we needed a snack. Her family ate pretty healthy like, so when they plopped down this bean dip in front of me, and a bag of Blue Corn tortilla chips, I was a little wary.
Mmmmmm. Delicious. Seriously. It is such a great summer day snack. I can usually eat it as a meal! Mix it up by using blue corn chips (the healthy alternative to white corn tortilla chips,) and dipping celery into it as well!
I will warn you.... if you don't strain the corn and the diced tomatoes, the liquid gets a murky look, and then it looks like puke, and not food. So, you know, don't do that!
Elba Bean Dip
(Redneck Caviar)
Ingredients
§ 1 can of shoepeg corn
§ 1 can of black beans
§ 1 can of black-eyed peas
§ 1 can of seasoned tomatoes with oregano
§ 1 can of rotel tomatoes
§ ¾ cup of chopped onions
§ ½ cup of Italian dressing
Directions
1. Combine corn, beans and black eyed peas in strainer.
2. Drain. Do not rinse.
3. Pour into refrigerator ready container.
4. Add seasoned tomatoes, rotel tomatoes, and onions.
5. Stir gently.
6. Add Italian dressing as needed.Refrigerate for at least four hours

Redneck caviar. Snort, giggle giggle, snort snort. I LOVE the name for it!! I will have to try that. It's like my bean salad that I make, but with an Italian flare. Nice!

With a name like that- y'all just know I've got to try making this stuff!! Zachary will fall on the ground and refuse to eat it and Emma will eat tons and get into a farting contest with her sisters! Yep- our house is all about class!
